Salsa Brava

2 medium carrots, julienned
1/2 small head white cabbage, shredded
1/2 medium onion, diced
1/2 green bell pepper, diced
1/2 red bell pepper, diced
4 serrano chiles, finely chopped
1 and 1/2 teaspoons salt
1/2 teaspoon pepper, finely ground
1 cup white vinegar
1/2 tablespoon sugar

Pack it all into an airtight container. Shake. Leave it in the fridge at least over night. Pack a bit into your lunch the next day. Makes enough for lunches all week long.



Lessons learned this evening.
  1. Bananas are not a good ingredient to make beer out of, not even if it is a white ale.
  2. English style pubs do not have good buffalo wings.
  3. English style pubs, even if in the states, have some good beers on tap, beers made out of bananas notwithstanding.
  4. I have a good friend.

I guess some people like it but I figured I was in trouble when it arrived with a slice of lemon in the glass.

First, I've always thought of you as a good friend too, even though we've had our moments (the whole bleach debacle and the wash-up after pee-pee controversy) but it's nice to get that out in the open and whatnot.

Secondly, okay, I'll give this a try and report back. It looks rather like cole-slaw-lite, no? I'm not sure about Julie-Ann-ing the carrots though, as I don't have any sort of device that would perform that task, but I'm guessing if I just lop up a couple carrots it'll have the same effect. Also, I don't know what a serrano chile is, in what section of the grocery store would one find those?

You can pretty much use any type of chili pepper for this recipe. Serranos tend to be pretty hot. To make it even hotter, use habaneros. To make it less hot use something milder. I dunno about the grocery stores up there in Clevelandia, but down in warm and cheerful southern Ohio, they keep the fresh hot peppers right next to the fresh bell peppers in the produce aisle.

I cheat on this recipe by just throwing all the vegetables into my food processor to make everything the consistency of cole slaw.

You'll also lose a lot of the heat from a hot pepper if you take the seeds out. I usually leave them in because, well, I'm a man. But sometimes when my wife and children have to also eat whatever it is that I'm making, I'll de-seed the peppers.

German Weißbier (or "[Hefe-]Weizen") has some banananana note to it along with clove. Neither of those are used in the brewing. If you leave a case of empties in your car for a couple days it'll reek of banana. I lost the link that explains the molecules in detail. I never thought Hoegaarden came even close to Weizen and I drink quite a lot of it. Hoegaarden comes across as much milder to me. Try a Scheider Weisse some time.

Krauts do disgusting things with drinks. They also have shandy (which has a different name depending on the region you're in). Lemons in Weizen is for tourists but in Bavaria, some locals will actually ask for a half-and-half mix of Weizen and bananana juice. Yes, bananana juice exists, it's almost as thick as syrup, ad people actually drink the shit. It's the Weizen version of a shandy/"radler".

I allow nothing in my beer except more of the same beer.

You would just need a bigger container. You're basically pickling the veggies, so it should keep well to be eaten over time. The recipe is from a restaurant, so I would guess that they have plenty of things to do with the other half.

The sugar basically acts as a brake on the acidity of the vinegar. Without the the sugar, I'd expect far more sharpness and sourness from the dish.

Everything except the chili peppers, I'm a bit leery about having it be too hot.
